The Scoop Server is one of our most ingenious pieces and while we naturally think to use it to serve chips and dip, there are so many fantastic ways to brighten up this true Nambé classic. A chilled shrimp cocktail, anyone? Clams and oysters on the half shell? We can go on, but we thought a seasonal summer salad would a good place to start – tell us these colors don’t shout summer.
Not only is this recipe easy to pull together, it’s requires only 5 ingredients. It might just be a new favorite at your next outdoor get-together. Here’s what you’ll need:
- 1 Head of Bibb Lettuce
- 2-3 Watermelon Radishes
- 1 Large Pink Grapefruit
- 3/4 Cup of Shelled Pistachios
- Crumbled blue cheese (or blue cheese dressing)
First, wash the lettuce and give it a rough chop. Thinly slice the watermelon radish, either with a knife or mandolin for even pieces. Next, peel and segment the grapefruit. (Tips for doing this like a pro from Food52.) In a mixing bowl, combine the lettuce, sliced radish, segmented grapefruit and pistachios. and toss. Add completed salad to the bottom of your Scoop Server. Add the blue cheese or blue cheese dressing to the top bowl and voilà!
